Brewing
Use the suggestions below as starting points and adjust to taste.
- Gongfu brewing: Use 5-7g tea for a 100-120ml gaiwan or small teapot. Use boiling water, rinse briefly, then start with 15-25 second infusions and gradually lengthen.
- Western brewing: Use 3-4g tea for about 300ml water. Brew with near-boiling water for 3-5 minutes. Re-steep 2-3 times, adding time each round.
- Boiling / simmering: For a stronger, warmer cup, simmer 4-6g tea in 500-700ml water for 8-15 minutes, then adjust strength to taste.
